Pork Chops

Pork Chops are another one of my least favorit meats, but again...... YOU HAVE GOT TO TRY THIS!!! You may change your mind after this one!!!

4 - 5     1 inch Pork Chops
1/4 cup of Butter
Garlic Powder
Onion Powder
Pepper
1 Cup of Water
1 Tbsp of Worchestershire Sauce
1 Medium Onion
3 - 4 Bay Leafs
3 - 4 Carrots / quartered
5-6 Potatoes / quartered

Season Pork Chops to your desire... Everyone is different.. I use Garlic Powder, Onion Powder and Pepper.  But you use whatever you want. Turn Pressure Cooker to Saute' and melt 1/2 of the butter. Brown Pork Chops in Butter.  Remove and Set aside...... Add Potatoes and remainder of butter and stir around.. Place Pork Chops on top of Potatoes.  Then add Carrots, Onion, Water, Worchestershire Sauce and Bay Leafs.  Seal the Pressure Cooker and cook for 15 minutes... When it beeps... Release pressure with Quick Release..... OH MY Goodness!!!! You will never again Cook Pork Chops any other way!!!!!  Enjoy!!!

Do I have the BEST most Delicious Roast Recipe EVER!!!! I have been cooking roast for 20+ years now and I have found that the Eye Roast is the most difficult and most tasteless Roast out there.... But not anymore!!!! This one was a little extra work in preparation..... But you will agree.... Worth every second!!! Here it is:

1 3lb Eye Roast
2 cups of Beef Broth or Vegetable Broth
One small Onion - Cut up into halves
3-4 Bay Leafs
1 tbsp of Olive Oil
Season with whatever you like

Season the Roast with whatever you desire... I used Garlic Powder, Onion Powder, Thyme, salt and Pepper. Preheat Cast iron skillet with 1 Tbsp on Olive oil.  If you do not have a cast iron skillet, any skillet will do.  Once skillet is HOT place roast in the skillet and brown on all side including the ends. Now set aside.

Add 2 cups of Broth to Pressure Cooker. Place Eye Roast in the Broth.  Toss in the Onion and Bay Leafs.  Close the lid and seal Pressure Cooker.  Cook for 55 minutes and  let steam release natural... This takes about 25 min. or so.  Remove lid carefully.  Place the  Roast on a serving dish and allow to sit for 10 to 15 minutes before carviing.  In the mean time, I suggest pouring the juice into a sauce pan and make gravy from the that. 

Gravy:
In small bowl add 3 tbsp. of flour... and enough water to make a paste the consistency of a milk shake. I use I whisk.  Bring your juice to a small boil.... Slowly add Flour/water to the juice stirring with a whisk until desired thickness is reached... You may need to add more flour mixture depending on the amount of the juice.

So there you have it folks..... Doesn't get much better than that!!!

Kristina's Potatoes and Parsley

Received this recipe from my daughter Kristina.  It is tried and true!!!  This has become her own specialty and she has perfected it to a Tee!!!!  Very delicious!!!

Here you go Mom! Here is my special potatoes!!    New Potatoes with Parsley!  4 tablespoons of unsalted butter (I usually use more) 2 pounds of red potatoes halved lenghthwise 1 garlic clove (i usually put in 3 or 4) 3/4 teaspoons salt or to taste 1/2 cup chicken brooth 2 tablespoons parsley Place 2 tablespoons of butter into the cooking pot. Once butter begins to melt, stir in potatoes, garlic and salt. Saute so that the butter coats all potatoes and the garlic becomes aromatic( About 5 minutes). Add Chicken broth. Lock lid. Select High Pressure. Set timer for 5 minutes. When pressure cooker beeps, release quick release. When Pressure is released remove lid. Strain potatoes put potatoes back into cooking pot. Stir in 2 table spoons of butter and parsely!

Cabbage, Potato and Keibasa

OK folks here we go.... My very first Recipe!!! This one is one of my favorites!!! Quick, Easy, and VERY VERY YUMMY!!!

Cabbage, Potato and Kielbasa

Ingredients:

One large head of Cabbage - Cut into 1/4 and then each 1/4 in half
Approx. 10 small Red Potatoes (depending on size of potato) Don't over load!!
1 package of Kielbasa - cut in 3 inch pieces (sometimes I get crazy and put in 2)

1 cup of Chicken broth or water... I have done it both ways
Place Cabbage in first... NO RACK!!!!!!
Season with salt and pepper, if so desired!!  I Desire!!
Next place the potatoes and then top it off with the Kielbasa!!!

Mmmm!! Almost there!!!
Place lid on top and lock it in. Cook on High Pressure for 13 minutes. This will be a quick release.. When lid unlocks, remove and look inside!!! You will be amazed at the appearance and the smell will be even more amazing!!!

I usually, very carefully, pour the contents into a Large serving dish and place on the table... May I suggest a nice dinner roll of your choice.  I have also discovered (now stay with me on this) Malt Vinegar drizzled over the cabbage, is the kicker to a wonderful and delicious meal!!!  Enjoy and tell me what you think!!!!

Welcome

First and foremost, welcome to my blog.  I hope you will find it as enjoyable as I plan to make it.....My affair with the Electric Pressure Cooker began on December 25, 2009.  As a gift from my daughter, it was love at first sight!!! I had never considered one before, but she knew my passion of cooking and thought it would be something new and different for me... She was right!!!

In my quest to find recipes out there to try, I quickly discovered there where none. Outside of the little book that came with it, absolutely nothing. So I decided to start this blog, in hopes others will discover it and share there experiences and recipes with all of us!!!

I have experimented with my own recipes and in the very near future, I will begin to post them.

So feel free to join in and add your own and maybe together we can discover new and exciting recipes... Not to mention.... Good Eating!!!
