Do I have the BEST most Delicious Roast Recipe EVER!!!! I have been cooking roast for 20+ years now and I have found that the Eye Roast is the most difficult and most tasteless Roast out there.... But not anymore!!!! This one was a little extra work in preparation..... But you will agree.... Worth every second!!! Here it is:

1 3lb Eye Roast
2 cups of Beef Broth or Vegetable Broth
One small Onion - Cut up into halves
3-4 Bay Leafs
1 tbsp of Olive Oil
Season with whatever you like

Season the Roast with whatever you desire... I used Garlic Powder, Onion Powder, Thyme, salt and Pepper. Preheat Cast iron skillet with 1 Tbsp on Olive oil.  If you do not have a cast iron skillet, any skillet will do.  Once skillet is HOT place roast in the skillet and brown on all side including the ends. Now set aside.

Add 2 cups of Broth to Pressure Cooker. Place Eye Roast in the Broth.  Toss in the Onion and Bay Leafs.  Close the lid and seal Pressure Cooker.  Cook for 55 minutes and  let steam release natural... This takes about 25 min. or so.  Remove lid carefully.  Place the  Roast on a serving dish and allow to sit for 10 to 15 minutes before carviing.  In the mean time, I suggest pouring the juice into a sauce pan and make gravy from the that. 

Gravy:
In small bowl add 3 tbsp. of flour... and enough water to make a paste the consistency of a milk shake. I use I whisk.  Bring your juice to a small boil.... Slowly add Flour/water to the juice stirring with a whisk until desired thickness is reached... You may need to add more flour mixture depending on the amount of the juice.

So there you have it folks..... Doesn't get much better than that!!!
